Poached Egg on Smoked Salmon on Crispy Fried Sweet Potato, Beetroot & Zucchini Primed Pattie with added chili.

Here’s a delicious and nutritious Primed meal that is extremely versatile. It is great for breakfast, lunch or dinner. It is easy to prepare, inexpensive (if you exclude the smoked salmon and substitute bacon or chicken) and you can make a big batch to make life easier tomorrow.

Ingredients

Beetroot
Zucchini
Sweet Potatoes
Eggs
Salt and Pepper
Chili (optional)
Coconut oil for frying
Smoked salmon (optional as you can also substitute kimchi, avocado, spinach, chicken etc.)

Also can use:

Squash
Carrots
Onions
Garlic
Mince pork, beef or chicken
Malunggay
Coconut flour
Almond flour

Method

1. Grate sweet potatoes, zucchini and beetroot (other veggies are welcome, especially malunggay).

2. Add salt, pepper, egg and chili (optional) then stir.

3. Pan fry in coconut oil till crispy.

4. Add smoked salmon (or chicken, spinach, tomato, kimchi etc.) on top.

Additional

1. You can add smoked salmon (or chicken, spinach, tomato, kimchi etc.) on top. Add perfectly poached egg and voila. A great nutritious and delicious meal for the family.

The runny poached egg can be used as your sauce. Delicious.

2. Of course you can use your Primed Vegetable Pattie as a base for your Primed Eggs Benedict with Hollandaise Sauce.

Once you have your creative base (who needs sugar spiking, anti-nutrient, leaky gut causing bread) simply add your poached egg and then Hollandaise Sauce.

Great Carbohydrates Saturday – Sweet Potato Wedges

Sweet Potato Fries are the bomb. They taste sensational, are good for you and go well with any dish. Especially bacon!

If you are carbohydrate intolerant due to having abused them in the past then Sweet Potatoes should not be a staple in your diet but a once in a while item. However, for a healthy person once a week is cool.

Joining Audax Randonneurs Philippines is Fabulous Fun

Natasha and I joined over 250 other cyclists and triathletes in the Audax Randonneurs Philippines 200km Brevet Ride in the early hours of Saturday the 24th of January. The ride was from Subic to Masinloc and back and was a hoot.

The event was summed up perfectly by Basta Masaya when he said: “Chilly morning, hot midday, strong winds, great participants, new friends, HEROES all.

I am always trying to come up with some new cool dishes for my children to enjoy for breakfast, lunch or dinner. Well, here is an item that is nutritious, inexpensive, tasty and good for any meal time. It is the traditional Scotch Egg where a layer of meat is wrapped around a boiled egg then pan fried.  Sounds good right?  It is a traditional British recipe that is making a comeback as people look more and more for real food items like their Grandparents used to eat.

How a Simple Lifestyle Change Helped Reduce my PCOS (PolyCystic Ovary Syndrome) Condition: A True Story

Early this month, I thought I was sick because of severe bleeding. I’ve been diagnosed with Polycystic ovaries (PCOS) for 10 yrs and despite taking hormone pills prescribed by my doctor to fix my imbalances, my condition never really improved. I gave up on my medications 4 years ago, I didn’t want to take any medicine for they were also expensive. And so for 4 yrs, I’d only have my period 3 times yearly….

My 1st period came March 2014 then the 2nd came around August… 2 weeks after I significantly reduced my white sugar and rice consumption (also no grains and no noodles) as advised by Primed for Your Life Wellness Coach, Chad Davis.

Then Sept 5 came, I noticed I started having blood discharges. I thought it would last for only a few days, but it never stopped til early Oct. By the 1st weekend of October, the blood flow became severe, that I had to go to the hospital as I thought my bleedings were caused by abnormal growths in my uterus since I never visited my doctor for years.

My OB performed an ultrasound and confirmed that I was actually having a normal period. She was so surprised because I never took any meds and because I had my period again only after a month. She confirmed that it was due to my lifestyle/diet change. She (my doctor) even gave me a go signal to continue on with whatever I was doing and even asked me what I did, so she can also advise her other patients who have PCOS to do what I did! The ultrasound results were very good! I have no cysts nor polyps or any abnormalities. Turns out I’m healthier than ever!

Since I lack exercise, my weight loss is very gradual. I almost gave up and wanted to eat rice again, but little did I know that my lifestyle change was doing major changes in my system! I’m so happy now and I feel much healthier as I never thought my imbalances would improve!

I really thank you, Ms. Cathy and the whole Nurture team because you and Chad Davis were the reasons behind my health success!

This is why I wanted to write some safety tips for rookies like me for when they too join a trail run. Preparation is the Key – Pick the Right Race and Distance

It all starts with picking the right race and run category for you. My last race was a 21km trail where we were pre-warned by the organizers that “THIS IS TRAIL RUNNING! THIS IS EXTREME SPORT!” Indeed, it was so tough that only 23 out of 150 starters made it within the 7 hour cut-off time! Perhaps I should have started with the 10km category or even try a 21km with a trail that is not so demanding.
