Cookie’s Primed Pork Adobo over Veggie Kinilaw

From Cookie “This is 3 day old Pork Adobo paired with a Primed Veggie Kinilaw. Lunch was really good

Ingredients:

Adobo1

Pork Adobo

1 kg lean pork (kasim with fat sliced off)

2 heads of garlic (crushed)
1 medium onion (sliced)
1 cup chopped tomatoes

3 Tbsp coco vinegar
2 Tbsp soy sauce (or substitute like coconut amino sauce)
3 tsp salt
1 tsp whole peppercorns
3 bayleaves

 

Adobo9

Method:

Put everything in a pot and simmer until tender. About 1 hour. Add water if adobo is too dry.

Best served after at least 1 day”

Primed Chicken and Pork Adobo with Added Greens

I know Filipino’s LOVE their own cuisine. I also love Filipino dishes such as Primed Kinilaw with Extra Vegetables, but find some do not incorporate enough nutritious vegetables and are overly reliant on rice as a base.

I will try to create delicious and healthy Primed Filipino dishes by substituting non-Primed ingredients with Primed ones, as well as adding non-traditional ingredients to make them a better fuel source for your mind and body. Adobo is one of my favorite dishes so I’ll start with a Chicken, Pork and Wilted Greens Adobo.
