We buy our fresh seafood from Fishmongers Daily Catch (Chad).
Here’s another cool recipe from Imelda:
“I bought some mixed seafood. Made a seafood chowder.
Ingredients:
Bacon 3-5 slices. More if you want
Celery, diced
Onion , diced
Garlic, chopped
Ginger powder
Oregano
Thyme
Salt
Pepper
Pinch of cayenne pepper
Coconut cream
Egg (optional)
Method:
– Heat the bacon to get the fat (heat till crispy). Take out the bacon
– With the bacon fat, stir fry the garlic onion till fragrant. Put in the celery. (You can add diced carrots also if you like. My kids dont like it). Pour 4 cups if water (depending on how much seafood you have) and bring to a boil.
– Add seafood , add spices (to taste) and cook till tender. Add coconut milk. You can add an egg to help it thicken. But it wont thicken as much as a regular “chowder”. Taste you soup to determine if it has enough spices. Serve with crumbled bacon.”
